Crumbled Lemon and Basil Pie
(for 3 little pies diam. 12 cm/4,7 in)
3/4 cups + 2 tablespoons flour
3 tablespoons slightly salted butter
5 tablespoons sugar
2 tablespoons e.v.o. Colonna Tulsi (basil)
In a food processor, combine the flour, sugar and butter and process until you get a granular dough, then add egg, Tulsi Extra Virgin Olive Oil, processing until the mixture forms a ball.
Divide the dough into three parts and form into a ball.
Roll out dough on non- stick surface, putting aside a piece of dough that will be crumbled on the pie when it is half baked. Make holes in the uncooked pie crusts using a fork and cover them with the lemon jam.
Bake at 350° F for 10 min.
Take them out of the oven and crumble the dough previously kept aside on top of the pies.
Bake for 10 more minutes or until the pies are golden.
Let them get cold before serving.
