Condimento Balsamico and Bresola
Here is a sophisticated way start a holiday gathering that is quite easy to prepare. Condimento Balsamico is made with the same ingredients and according to the same rules as Aceto Tradizionale, but it is not submitted to the jury for approval. It makes a wonderful gift.
Bresola is eye of the round beef, salted and air-dried. It originated in Lombardy but is appreciated all over Italy. Use a truffle slicer or vegetable peeler to shave the cheese into curls. Have the Bresola Valtellina P.D.O. sliced paper thin and fold it in on itself. Arrange it on a board. Sprinkle a few drops of Extra Virgin Olive Oil on the meat and let it set for a few minutes. Pile with shavings of Parmigiano - Reggiano P.D.O. Liberally drizzle both the meat and cheese with Condimento Balsamico. Break out the prosecco!
