The Barbieri Family produces this Del Cristo Traditional Balsamic Vinegar of Modena DOP, from their own biologically grown grapes,from their own small farm in the north of Modena, Italy. The grapes used are exclusively Trebbiano and Lambrusco, and its flavor is unmistakably complex, sharp, and pleasantly acidic.
Traditional Juniper Balsamic is syrupy and smooth, like traditional White Seal, only with traces of resin from the wood that give it its characteristic body and spicy flavor. The White Seal traditional Balsamic Vinegar is aged for a minimum of twelve years in rare juniper wood barrels, that impart a greater depth of flavor that has a wonderful spice.

The Del Cristo Traditional Balsamic Vinegar of Modena (DOP) is produced by the family from maturing this grape must over a long and slow vinegarization process through natural fermentation.
