Zucchini with bergamot oil, mint and hemp seeds
7 zucchinis cut into 1/2 inch rounds
1 large red onion, diced
4/5 tablespoons of Colonna Bergamia Extra Virgin Olive Oil
4 fresh mint leaves
Dehusked hemp seeds
Saut onion in Colonna Extra Virgin Olive Oil for about 10-15 minutes. Onion should be soft and start to brown.
Add zucchini to pan with onions, saut for 20 minutes. Add a few drops of water to mixture so zucchini doesn't brown.
After 20 minutes add mint leaves and gently mix.
Serve adding many hemp seeds and more Bergamia Extra Virgin Olive Oil.
This fresh and tasty side dish can be also served at room temperature.
