Soft Cake with EVOO


3 eggs

1/2 cup of plain yogurt

1 cup sugar

1 1/2 cups flour

1/2 cup EVOO "Biancolilla"

Pinch of salt

Grated peel of 1 lemon

1 tablespoon of baking powder

Use the yogurt pot to measure the ingredients.

Whisk the eggs, sugar and salt with an electric whisk; add the rest of the ingredients and mix well.

Preheat the oven to 320°F. Pour the mix into a buttered and floured mold, bake for 40 minutes. Do not open the oven during this time.

Remove from oven and invert on a rack. Let cool. Before serving, dust with powdered sugar.
