Caramelized Popcorn à la Fleur de Sel


1 cup of popcorn kernels

1/3 cup whole almonds, crushed in food processor

2 teaspoons fleur de sel

2 cups sugar

4 tablespoons water

1 tablespoons vegetable or canola oil

Add 1 tablespoon oil and corn kernels to a pot, and pop the corn over medium heat, rotating constantly.

Preheat oven to 300 degrees F.

Toast almonds in oven at 300 degrees F until they turn light brown.

Mix together the toasted almonds, popcorn and fleur de sel.

In a small pot, mix sugar and a teaspoon of water until sugar is moistened.

Over low heat let mixture come to a boil, while continuously stirring and scraping the bottom of pan.

Once caramelized, dilute with the remaining water. Drizzle over popcorn.
