AVOCADO and COTTAGE CHEESE with FLAX and CHIA SEEDS, PEPPER and GRANVERDE EXTRA VIRGIN
You are working from home more often. Use the extra time you save not commuting to develop some good habits and to explore some new dishes. Take the time for a nutritious and yummy breakfast. This recipe involves minimal prep time. It calls for some trendy ingredients. Szechuan pepper is not necessary but adding it does take you beyond the realm of the usual. Use a sheep’s milk ricotta if that is your preference. This makes a for a wonderful savory breakfast. If you prefer something sweet to start your day, just drizzle some honey on top. Serve this with toasted slices from a rustic loaf.
Granverde Extra Virgin Olive Oil with Organic Sicilian Lemons
4 oz. cottage cheese or ricotta
Szechuan pepper, crushed or milled black pepper, to taste
Sea salt, to taste
1/4 teaspoon each flax and chia seeds
Halve the avocado. Remove the pit and skin. Slice each half lengthwise into 4 pieces.
Drizzle with the Granverde oil and season with a bit of salt and pepper. Top with the cottage cheese and another drizzle of oil and a bit more salt
and pepper. Scatter the seeds on top.
Use a sheep’s milk ricotta if that is your preference.
