Esprit Du Sel - Sel Gris - Grey Salt

French company Esprit du Sel is a world leader in the production of Grey sea salt fleur de sel's dark-hued island cousin collected from the bottom of the salt bays. Located on the Island of R Esprit Du Sel represents about 15% of the total market for grey sea salt (approximately 2000-3000 tons per year). The French National Center of Culinary Art (CNCAC) has awarded the salt marshes of the Island of R with the French designation "Remarkable Site of Taste." Hand-harvested ("raked and gathered") during the summer season, grey salt contains 1-3% clay, which gives the crystals a warm pewter color and earthy flavor. The natural salt is not treated or washed thus conserving healthful minerals. An everyday table salt at French bistros, use the rugged textured, briny crystals for all your cooking and as a base for rubs; its coarse grain works its way into the meat adding flavor and moisture.
